I was surprised to learn Canada is the largest producer of lentils in the world. I assumed it was India but we grow 3x the volume here.

Yeah! Apparently the real issue is with the infrastructure to wash/process them into a food grade product. For this reason they often get shipped overseas and then back again :colbert:

(someone might need to fact check this, but this is what my farmer friend told me)
