It’s like “maths.”
I think this entirely appropriate given that before through axles came onto the scene each side of the wheel holder had tines.

Not quite, mathematics/“maths” is still an uncountable noun treated as singular i.e. “My favorite subject is mathematics”. “Forks” is plural.

In Aotearoa NZ we say, both. “Hey mate, how do you like those new forks?” Or “how is that new fork working out for you?” Or, “I’m just heading out to the LBS to buy a new set of forks”. A “set of forks” is quite a common term. Not sure what they say in Aussie?
Pretty much the same. Fork/forks interchangeable.

Not with those specific bits, but I use their cargo cages w/ suspension fork attachments, and I’ve seen their top tube bags in person. I’ve used Apidura, Revelate, Restrap, and a few other also-rans and the Tailfin stuff is the best finishing/quality. Feels more like high end camera equipment than camping gear.
They’ve seemed to spend the most time refining the ‘on and off the bike’ experience of anyone, so you might get spoiled using it.
