Doug says I should go white with a white saddle, but I think that’s insane for a bike that will be ridden on gravel and mud a bunch.

I’d go blk/blk even though wht/wht would look baller. Whiter tape gets dirty quicky, and the saddle will look nasty after a bunch of dirty miles, even after cleaning it with a magic eraser. The better question is, how did you find a complete bike with di2 GRX in these current times?
Shimano rep told me ultegra di2 groups are a few months out and grx di2 is even further. The biggest hurdle is the current internal battery has no ETA whatsoever.
Oh, that’s a misleading pic - I just got plain ol’ GRX600. That picture was just the best one I found of the paint color.
Get an absurd colored saddle that fits your butt, then get tape to match the saddle
