That’s as big a tire as my Hot Tubes takes. To be honest, I don’t know why you’d want much bigger than a 32c on a cross bike.
^By modern road bike standards, having clearance for 700x32 tires means you can fit “large” tires.
Many can barely fit 700x25… 
Because I ride single track too. Some really rocky, rooty single track with steep descents. I’ve never ridden anything bigger than 32c and it’s always fine, but having the option to go bigger is nice. The Giant has 35s right now and I’ve yet to take it on any trails.
You can also do it with a length of allthread, some teflon washers, and bolts - kind of like a reverse DIY headset press. You just have to be careful to rotate the bolts on each side the same amount and slowly to keep things aligned.
I had a 120 mm track hub pinched in my 130 mm LeMond (I was clueless and poor) for about 8 years. The alignment remained perfect and the rear spacing is now naturally 128 mm, haha. I’m so glad I jack-assed that with steel instead of a less forgiving material.

As in, when you are/will be commuting, will the bike you ride be locked up outside? If so, is it well lit, close to foot traffic, etc…?
Of the three bikes, the Salsa screams “steal me” the loudest.

I do lock up outside but only in the middle of the day with a lot of foot traffic around.
from the riding you describe (i.e. you’re not racing, you like to hit trails) getting rid of the Giant frame/ fork makes most sense.

This. I’ve decided to never sell a bike again. I always miss them.
But I mostly commute at high speed. The Giant is definitely a better climber too.
I’m going to wait for a few days and see if I get this job.

By all means, keep the race bike for commuting; makes perfect sense.
